"We both wanted to make a spiced dark brew for the colder winter months coming up, with the inspiration being a Mayan Hot Chocolate. This brew puts a regional twist on the drink by using New Mexican red chiles, which provide aromas of dark fruit, tobacco, and have a very mild spice. The New Mexican Chiles combined with cacao nibs and dark malts, provide a lovely balance of fruit and chocolate notes."
