Ho-ho-hello, my holly, jolly lil cooks! Asha — AKA Diaspora Co’s recipe editor and yuletide-lovin’ elf — reporting for duty. ‘Tis the season for merry baking, festive feasting, and getting your holiday party on. This celebration season, the spice taking center stage on my table is: Kashmiri Saffron. Rich, aromatic, and often tucked away for special occasions, saffron is the perfect pick for everything from mains to desserts and drinks. For the former, I’ll be cooking up my Lemony Saffron Chicken & Potatoes. First, the chicken is seasoned overnight with saffron, Surya Salt, and Guntur Sannam Chillies, then slowly browned, rendering its fat to create the base for an extra luscious, silky sauce along with white wine, caramelized lemon slices, shallots, and preserved lemon. This might be one of Sana’s favorites of all the recipes I’ve ever developed, and that’s saying something because she doesn’t even like chicken!

The deep, honeyed notes of Kashmiri saffron also translate beautifully in sweets and baked goods. Laurie Ellen’s Honey Saffron Biscuits are a great example of this, and are on my holiday cookie roster every single year. Of course, Keya’s Saffron Ice Box Cake — topped with saffron marshmallow fluff (yes, you heard me right!) — makes a stunning end to any fête. And, don’t forget to shake up some Saffron Gin Fizz, too (you can find this recipe and so many more in our Diaspora Drinklet, which also makes a mighty fine gift, imo).
