If you didn’t already know, we’re big fans of chai out here. It’s what my team in our Mumbai office brews at 4pm when the craving hits, it’s what so many of our farm partners sip on to start a long day of honest work, it’s what millions of people across South Asia reach for every single day during work breaks, and it’s what we always serve several cups of to our community at our events and pop-ups. In other words, for us, chai means comfort, community, and a few moments of quiet joy.

Meanwhile, here are my most favorite chai tips and nerdy tidbits:
☕️ South Asia actually didn’t have a big tea culture before colonization. While tea consumption was largely forced upon South Asians by the British, the addition of spices can be credited to the many chaiwallahs, who found a way to make the beverage their own! There's so much more chai and spice history in our cookbook, which you can preorder here!
☕️ Bombay’s iconic chai is known as “cutting chai”, a very local term for a cup of chai that’s “cut” in half. It’s the perfect serving size for a quick streetside drink.
☕️ The tea you’ll find in the innumerable cups of chai in South Asia is CTC black tea, named after a processing method called “crush, tear, curl”. It’s a full-bodied, medium strength tea that works beautifully with milk and spices. When we were on the hunt for great tea, we knew it had to be CTC — that’s why we landed on our Chota Tingrai black tea from Assam!
☕️ Jaggery is THE perfect sweetener for chai, in my humble opinion! Its rich, caramelly sweetness plays so well with the warming spices in chai. That’s why our chai bundles always feature Madhur Jaggery!
