Becca from Fishwife here! You know our Smoked Rainbow Trout: buttery, smoky, melt-in-your-mouth perfection. We just leveled it up with a gorgeous Red Chimichurri sauce.
When I reflect on this exciting launch, I can’t help but think of the winding road that brought our Smoked Rainbow Trout to where it is today. We first launched Smoked Rainbow Trout in 2021 with a tiny cannery on the coast Oregon. As we grew, we partnered with another in the Pacific Northwest cannery to meet demand, but even that couldn’t keep up with your love for these tins.
At the same time, I couldn’t shake the idea that we could create something that showcased the fish’s rich flavor and buttery texture even more. So we took a leap, brought our smoked trout to a small cannery in the Danish countryside, and reformulated a tin our customers already loved into one we believed they’d adore even more. Thankfully, the gamble paid off. Today, it’s one of our top sellers.
Once we had perfected this tin, the next step was figuring out what flavors could make it even more exciting. At the start of 2024, we asked for your input and we heard a resounding interest in chimichurri. So we partnered closely with our cannery to craft the perfect recipe: smoky trout paired with a bright, herby, garlicky chimichurri, made with roasted red peppers, parsley, cumin, chili, and paprika.
We gave our final thumbs up in the back of Jack’s truck, parked in a Target lot, tins and notes spread out across the tailgate. It was messy, scrappy, and quite a lot of fun. In that funny moment, we knew we created something truly special.
