Notes of fig newton, ripe red apple & creamed honey
This washed process Colombian lot comes from four 4th-generation women farmers in the Tolima region. After careful handpicking of ripe red bourbon cherries, they take their coffees to the La Roca wet mill, where rigorous processing and drying protocols are followed. Following an initial 24-hour dry fermentation, the cherries are de-pulped and fermented again, this time for 36 hours. The coffee is then dried on raised marquesina beds. It's clear that these farmers produced this lot with incredible care; we're thrilled to be able to share the (literal) fruits of their labor with you.
