The first time we tasted it back in 2018, it blew us away, and this year's lot is nothing short of stunning, with notes of blackberry, sweet basil, honey, peach, and chocolate ganache.

Birds, bees, and chickens meander among carefully plotted rows of coffee trees, and the fragrance of lemon verbena plants floats in the air. The scene at Fausto Romo's farm, Finca Carolina, is as lovely as it sounds.
Located in northern Ecuador's Pichincha province, near the equator, Fausto's farm is a place of harmony: the birds and bees help cross-pollinate the coffee trees, and the chickens provide natural tilling and soil fertilization.

Fausto first fell in love with coffee when his uncle gifted him seeds of the unique Sidra varietal, a hybrid of Bourbon and Typica. After years as a dairy farmer, he turned his attention solely to coffee and hasn't looked back since.
In the last year, Fausto added another hectare to his farm with a new crop of Sidra trees, increasing its size to 4.5 hectares. Processing happens right in his backyard among flower and herb gardens, allowing him to closely monitor the coffee through washing, fermentation, and drying.

When asked about his philosophy of producing coffee, Fausto said:
"My philosophy is based on love, passion, and respect. Everything that is done with love comes out well."
