The Ninga Hill washing station was built in 2020, making life easier for farmers from nearby Giku Hill who no longer had to transport their cherries for miles. That convenience has also allowed them to focus on elevating their processing game. They've introduced anaerobic fermentation to their traditional washed methods, supercharging the flavors. The green apple acidity gets even more vibrant and is joined by tropical kiwi notes and a honey iced tea sweetness. Like all Trade Secrets, it's only available for 24 hours.
