We're super excited about this Trade Secret, because it's our first time offering Papayoβa coffee variety that burst on the scene just a few years ago and has become a favorite of barista competitors on the world stage.

Compared to other washed process coffees, this lot has big tropical fruit and cherry flavors and winey acidity. There's also a hint of cocoa in the background rounding things out.
It's produced by Yessica Parra and her brother Diego, who are part of a new generation of specialty coffee farmers. Coffee has been in their family for generations, but they weren't planning to get into coffee until Yessica started studying it at school. In the last few years, they've started not only growing and processing coffee but also roasting it and exporting it.

P.S. Fun fact - as you might have guessed, Papayo is so named because it looks, in color and shape, like a tiny papaya. It grows mostly around the Huila region of Colombia, and, so far, little is known about its genetics.
