This coffee starts with a version of Costa Rica’s signature honey process, removing some of the fruit from the coffee cherry and beginning to dry it. Then, after 4 days, they pause and begin a long, 8–10 day fermentation before drying it fully.
The resulting coffee is filled with pineapple, cherry, and pomegranate flavors balanced by a hint of chocolate.
