Our latest release comes from Edwin Noreña, a Colombian producer renowned for his innovative processing methods. He’s taken his exceptional Pink Bourbon variety and turned it into a coffee that tastes just like an IPA—citrusy, hoppy and smooth.
Edwin’s process is meticulous. After the ripest cherries are selected by hand, the coffee undergoes a 120-hour fermentation, followed by another 96-hour fermentation with hops and malt. The result? A refreshing and wildly unique brew.
