Popping into your inbox to share one of my favorite ways to elevate fruit - no matter the season. I do personally love melon, swinging with varietals that are freshest month to month, but it's golden with any beautiful and thoughtfully grown produce. This recipe has only six simple ingredients, yet, when sourced well, they come together to create the perfect harmony. The way nature intended.

- 1 Melon
- 4 tbsp Organic Extra Virgin Avocado Oil
- 2 tbsp chardonnay vinegar
- Pecorino (fiore de sardo), ricotta salata, or other hard, salty cheese
- Flaky Salt and Pepper
Take your melon and cut it into 1” slices long ways. Gently slice off the rind (you can pickle or compost it). Lay the melon slices along your plate. Top all the melon slices with flakey salt, fresh cracker pepper, vinegar, a healthy drizzle of Extra Virgin Avocado Oil and fresh shavings of cheese. Let the dish sit for a few minutes to meld the flavors and enjoy!
