The dressing |
|
|
50g Chardonnary vinegar
42g extra virgin olive oil
14g agave nectar
1 drop of lavender essence
2g of Dijon mustard
Combine all the ingredients, with the exception of the oil—this should be gradually incorporated to stabilise the dressing. |

The base |
|
|
35g cherry tomatoes
150g peeled cucumber
7g Tropea onion petals
20g avocado
4-6 medium-sized strawberries 15mL dressing Complementary seasonal vegetables- for enhanced hydration, consider radishes and iceberg lettuce
Place the above in a bowl, ensuring the dressing is coating all the ingredients. Season to taste with salt and add two leaves of basil and three of coriander for a fragrant finishing touch. |
