After a whole year of being out of stock, our beautiful, complex, earthy Garam Masala is finally back! You will find a version of this spice blend in innumerable South Asian households, and while the exact recipe of spices and their proportions vary across regions and families, garam masala makes up the base of thousands of South Asian dishes. It’s the perfect warming blend for allll your cozy winter soups, stews, and savory (and sweet!) pies.
The journey of this blend involves a lot of numbers (in the best way possible). We tested a whopping 25 versions of garam masala on the market and from cookbooks before creating five versions of our own. Lots of tweaking and tasting later, we arrived at our final blend which features 12 single-origin spices sourced from 58 small regenerative family farms (whew!). Cumin, fennel, coriander, black pepper, cinnamon, and more are carefully roasted and blended to give this masala a wonderful balance of spicy, sweet, earthy, and zesty flavors.
If you’re looking for places to start, our Garam Masala is at home in everything from a Cauliflower Rice Pulao and Jackfruit Biryani to a deeply flavorful Saag-shuka (saag+shakshuka) and crisp Potato Samosas. I love using it in Asha’s Spiced Apple Galette, where I find its earthiness interacts beautifully with orange zest, fennel, and tangy apples. You could also use it to cook a killer Butter Chicken for your holiday party–our version combines the mouthwatering smokiness of our Sirārakhong Hāthei and Byadgi Chillies with the warmth of Garam Masala and a touch of cinnamon. We’ve seen our community use it on roasted sweet potatoes, spicy fried chickpeas, dals and curries, and even on french fries! Someone even told us they mix a little into their ketchup. It really is the friendliest lil’ spice blend out there!
