Hi there, my spice lovin’ cuties! Asha here—Diaspora Co’s recipe editor and co-author of our upcoming cookbook (fall 2025, baby!). After months and months of long days of recipe developing for the Diaspora Cookbook, I took a few weeks off from cooking and now I’m ready to get back in the kitchen to prepare the biggest, most delectable Turkey Day spread.
The star of the show is the juiciest, most succulent Tandoori Masala Roast Turkey, starring our iconic Tandoori Masala. The masala—featuring 17 freshly-farmed spices, including coriander, cumin, garlic, ginger, Byadgi and Sirārakhong Hāthei chillies, amchur, cardamom, cinnamon, jaggery, Kashmiri saffron, and cockscomb flowers (for that brilliant red hue!)—is combined with buttermilk, Surya Salt, and Madhur Jaggery to create the dreamiest brine. Psst, you'll need ¾ cup of the tandoori masala, so make sure to snag the Chef’s Tin.
Instead of roasting the turkey whole, you’re going to break it down into pieces—don’t worry, I’ll guide you through it in the recipe!—which creates more surface area for the brine to penetrate and allows you to roast the breast, legs, and wings for different times, ensuring a never-dry bird. The result is SO flavorful and has the most gorgeous burnished skin (I mean look at the photo above, need I say more?). It’s truly a stunner—I promise, once you make this turkey, you’ll never make roast turkey any other way.
