In the North Marais neighborhood, the owner's true essence comes through, sharing his coffee and photography expertise. Having photographed a full book on the third coffee wave in Paris, Fringe brings the owner's two true loves in one. Rotating artworks and photographs adorn the café's relaxing environment, which is mostly Scandinavian-inspired, including the menu.

Created for sharing, the restaurant cooks over a charcoal oven, bringing good vibes with live dj sets and a chance to dance for those who stick around after dinner.

Why: Beige and gold hues inform the 72 elegant rooms of the LVMH-owned hotel.
