This coffee is grown by Jhoan Vergara on his family farm, Finca Las Flores in Columbia, then processed at his mill Beneficio Peñas Blancas (this widely-known mill draws in farmers to process their coffee using experimental techniques). During thermal shock, the coffee is heated in its own juices at the end of fermentation, allowing it to absorb more flavor, before rinsing it with cold water to lock that flavor in.
This super juicy coffee reminds us of pineapple and lime with intense lavender aromatics, roasted carefully by our friends at Equator to bring out its best attributes.
